Sò điệp tách vỏ lấy cồi, để lại vỏ, rửa thật sạch. Ướp sò điệp với 1 muỗng cà phê hạt nêm và 1/2 muỗng cà phê tiêu, để thấm 5 phút. Chanh dây cắt đôi, lấy phần thịt, tùy thích có thể để hạt hoặc lược lấy nước. Phi thơm tỏi băm với dầu ăn, cho sò điệp vào xào chín, trút ra chén.
Dùng lại chảo, cho nước chanh dây vào nấu sôi, nêm 1/2 muỗng cà phê muối, 1 muỗng cà phê đường, 1/2 muỗng cà phê nước mắm cho vừa vị chua mặn ngọt. Cho sò điệp vào sốt chanh dây đảo đều khoảng 2-3 phút cho sốt chanh dây thấm vào sò điệp, tắt bếp.
Xếp vỏ xò điệp ra đĩa, múc cồi sò điệp sốt chanh dâu lên trên các vỏ sò, tình bày đẹp mát là có thể dùng. Cồi sò điệp thịt ngọt dai, quyện với sốt chanh dây chua chua, ngọt mặn, kích thích vị giác, khiến bạn ăn cơm thêm ngon miệng.
